Mutta Surkka/Egg Pathiri
Traditional recipe which is very tasty and especially cooked for newly weds!
Ingredients
- 2 cups Raw rice (pachari)
- 0.5 cup White rice (cooked) (Cooked rice is added in order to make the mutta surkka softer.)
- 2 units Egg
- 1 unit Carrot (Grated carrot)
- 1 handful Coriander leaves (Finely chopped)
- 2 cups Vegetable oil
- 1 tbsp Salt (Salt is added as per the requirement.)
- 0 as needed Water (Add little by little to achieve the desired batter consistency.)

Instructions
- 1Soak the raw rice overnight in water and rinse thoroughly before use.
- 2In a mixer grinder, combine the soaked rice, cooked white rice, and eggs. Gradually add water while grinding until a smooth batter is formed, ensuring it is neither too thick nor too thin.
- 3Transfer the batter to a bowl. Add salt, grated carrot, and chopped coriander leaves. Mix thoroughly to combine all ingredients evenly.
- 4Heat vegetable oil in a deep pan over medium flame. Using a large spoon, pour a portion of the batter into the hot oil. Cook until the pathiri puffs up and turns light golden brown, flipping once to ensure even cooking.
- 5Serve the mutta surkka hot, ideally accompanied by chicken or beef curry for a complete meal.
