Spicy Pathiri Fry/Orotti Porichadh
Try this simple Malabar recipe which is very tasty!
Ingredients
- 1 cup White rice
- 1 cup Parboiled rice
- 1 cup Coconut, grated
- 0.5 teaspoon Fennel seeds
- 0.5 teaspoon Cumin seeds
- 3 units Shallots
- 2 tablespoons Red chilli powder
- 0.5 teaspoon Turmeric
- 1 teaspoon Salt
- 1 cup Vegetable oil
- 1 cup Rice powder
- 1 as needed Water (For grinding and making paste)

Instructions
- 1Soak the white rice and parboiled rice for 3-4 hours. After soaking, rinse well and transfer to a mixer grinder.
- 2Add grated coconut, cumin seeds, fennel seeds, shallots, and salt to the soaked rice in the mixer grinder. Grind well, adding a little water, until a smooth paste is formed.
- 3Transfer the ground rice mixture into a mixing bowl. Gradually add rice powder and knead to form a thick dough.
- 4Divide the dough into small balls and flatten each into a disc shape.
- 5Prepare a steamer and steam the flattened pathiries for 15-20 minutes over medium heat until cooked through.
- 6In a mixing bowl, combine red chilli powder, turmeric, and salt. Add a little water to form a smooth paste.
- 7Once the pathiries are steamed, allow them to cool slightly. Then, coat them evenly with the prepared spice paste.
- 8Heat vegetable oil in a pan over medium heat. Fry the coated pathiries until they are golden brown and crispy.
- 9Remove the fried pathiries from the oil and drain on paper towels. Serve hot and enjoy!
