Pan Cake (Kerala Style)
This Kerala-style pancake is a sweet preparation that can also be enjoyed with chutney. It is a favorite dish among small kids for their school tiffin.

Instructions
- 1In a mixing bowl, combine the maida and salt. Gradually add water while mixing with your hand to form a smooth batter similar to dosa batter.
- 2In a separate bowl, beat the eggs until fluffy. Add the beaten eggs to the maida batter and mix well. Set aside.
- 3Heat a kadai over medium heat, add oil, and sauté the shredded coconut until it turns light brown.
- 4Heat a flat pan over medium heat and lightly grease it with oil. Pour a ladleful of the batter onto the pan, spreading it like a dosa. Cook until one side is done, then flip to cook the other side briefly. Flip again, place the sautéed coconut in the center, sprinkle with sugar, and fold the pancake from both sides.
- 5The pancake is ready to be served hot. It is a favorite among children for school tiffin. Optionally, serve with onion chutney by omitting the coconut and sugar.
