Indian Pancakes

Delicate spiced pancakes made with eggs, milk, and flour, flavored with cinnamon and sugar. These thin pancakes are fried in butter and finished with a quick browning before serving.

Ingredients

  • 3 large Eggs (Well-beaten)
  • 2 cups Whole milk (Fresh, at room temperature)
  • 3 tablespoons All-purpose flour
  • 2 tablespoons Granulated sugar (For the batter)
  • 0.5 teaspoon Ground cinnamon
  • 3 tablespoons Butter (For frying)
  • 0.25 cup Powdered sugar (For serving)

Instructions

  1. 1In a large mixing bowl, beat the eggs thoroughly until well combined and slightly frothy.
  2. 2Add the milk to the beaten eggs, then add the flour, sugar, and ground cinnamon. Mix all ingredients together thoroughly until the batter is smooth and well combined with no lumps.
  3. 3Heat a large frying pan or skillet over medium heat and add about 1 tablespoon of butter, swirling to coat the bottom of the pan.
  4. 4Pour about 1/3 cup of batter into the hot pan, tilting to spread evenly. Cook until the bottom is golden brown and the top is mostly set, about 2-3 minutes. Flip and cook the other side for another 1-2 minutes until golden. Repeat with remaining batter, adding more butter as needed.
  5. 5Place each cooked pancake under a preheated broiler or before an open fire for about 1 minute to lightly brown the upper surface, watching carefully to prevent burning.
  6. 6Cut each pancake into quarters and arrange on serving plates. Sprinkle generously with powdered sugar and serve immediately while hot.
