Drumstick Leaves Curry/Muringha Ila Curry

This curry is very healthy and contains a high amount of iron.

Ingredients

  • 2 handful Drumstick (Vegetable) leaves
  • 0.5 unit/count Onions, finely sliced (Finely sliced)
  • 1.5 unit/count Green chillies, finely sliced (Finely sliced)
  • 1 tsp Mustard seeds
  • 3 tbsp Coconut oil
  • 1 unit/count Dried red chillies
  • 0.5 tsp Turmeric powder
  • 1 cup Coconut, grated
  • 1 tsp Fennel seeds
  • 1 to taste Salt (Adjust to taste)
  • 0.5 cup Water (Warm water)

Instructions

  1. 1In a pan over medium heat, add coconut oil. Once hot, add mustard seeds, dried red chilli, sliced onions, green chillies, and salt. Sauté until the onions become translucent.
  2. 2Add the drumstick leaves to the pan. Sauté for 3-4 minutes, ensuring the leaves are thoroughly cleaned before adding.
  3. 3In a mixer grinder, combine grated coconut, fennel seeds, and turmeric powder. Grind to a fine paste and add to the curry.
  4. 4Add a little warm water to the pan and adjust the salt. Allow the mixture to boil, then turn off the heat once done.
  5. 5The healthy and tasty drumstick leaves curry is ready to be served.
