Drumstick Leaves Uperi
A traditional Kerala-style vegetable side dish featuring drumstick leaves sautéed with coconut, garlic, and spices, offering a flavorful and nutritious accompaniment to any meal.
Ingredients
- 1 bunch Drumstick leaves
- 1 cup Coconut, shredded
- 3 units Dry red chillies
- 6 units Garlic flakes
- 1 tablespoon White rice
- 4 tablespoons Coconut oil
- 1 to taste Salt

Instructions
- 1Thoroughly clean the drumstick leaves. Squeeze out excess water and place them in a clay cooking pot over low heat. Cover with a lid and cook gently, adding salt to taste.
- 2Once the leaves are tender, remove the lid and incorporate the shredded coconut. Stir well to combine.
- 3In a separate pan, heat coconut oil and add crushed garlic flakes, dry red chillies, and white rice. Sauté until the garlic is golden and the rice is slightly toasted. Add this seasoning to the cooked leaves and coconut mixture.
