Easy Drumstick Carrot Thoran

Healthy and nutritious drumstick leaves cooked with carrot in a traditional Kerala style preparation with coconut.

Ingredients

  • 2 cups Drumstick leaves
  • 2 units Carrot
  • 4 units Green chillies
  • 1 unit Red onions
  • 0.5 teaspoon Turmeric
  • 1 cup Grated coconut
  • 2 tablespoons Coconut oil
  • 1 to taste Salt

Instructions

  1. 1Separate the drumstick leaves from the stems and wash them thoroughly. Drain the water and set aside. Grate the carrots finely.
  2. 2Heat 2 tablespoons of coconut oil in a kadai over medium heat. Add the red onions, chopped into small pieces, and a pinch of salt. Sauté until the onions become translucent.
  3. 3Add the crushed green chillies and turmeric powder to the onions. Sauté until the raw aroma of the spices dissipates. Then add the grated carrots, mix well, and cook for a minute.
  4. 4Add the drumstick leaves to the kadai. Mix well and cover the kadai. Cook on medium flame, stirring occasionally, until the leaves are well cooked.
  5. 5Add the grated coconut to the cooked mixture. Stir well to combine all ingredients thoroughly. The dish is now ready to serve.
