Easy Drumstick Carrot Thoran
Healthy and nutritious drumstick leaves cooked with carrot in a traditional Kerala style preparation with coconut.
Ingredients
- 2 cups Drumstick leaves
- 2 units Carrot
- 4 units Green chillies
- 1 unit Red onions
- 0.5 teaspoon Turmeric
- 1 cup Grated coconut
- 2 tablespoons Coconut oil
- 1 to taste Salt

Instructions
- 1Separate the drumstick leaves from the stems and wash them thoroughly. Drain the water and set aside. Grate the carrots finely.
- 2Heat 2 tablespoons of coconut oil in a kadai over medium heat. Add the red onions, chopped into small pieces, and a pinch of salt. Sauté until the onions become translucent.
- 3Add the crushed green chillies and turmeric powder to the onions. Sauté until the raw aroma of the spices dissipates. Then add the grated carrots, mix well, and cook for a minute.
- 4Add the drumstick leaves to the kadai. Mix well and cover the kadai. Cook on medium flame, stirring occasionally, until the leaves are well cooked.
- 5Add the grated coconut to the cooked mixture. Stir well to combine all ingredients thoroughly. The dish is now ready to serve.
