Kaya Thoran/Raw Banana/Kacchha Kela Sabji

Ingredients
- 1 unit Raw banana
- 0.25 teaspoon Salt
- 1 tablespoon Oil
- 0.25 cup Water (Less than 1/4 cup)
- 0.25 teaspoon Turmeric
- 0.25 unit Onions (1/4 piece of one onion)
- 0.25 teaspoon Mustard seeds
- 0.25 teaspoon Split urad dal
- 0.25 teaspoon Chana dal
- 1 unit Dry red chillies (Small size)
- 1 unit Green chillies (Small size)
- 1 sprig Curry leaves
- 2 tablespoons Coconut, grated

Instructions
- 1Peel the raw banana and cut it into 1/2 inch cubes. Rinse the cubes in water mixed with turmeric.
- 2In a pot, cook the banana cubes with water and salt over low heat until they are half-cooked. Ensure minimal water remains after cooking.
- 3In a small pan, heat oil and add mustard seeds, split urad dal, and chana dal. Allow the mustard seeds to splutter, then add dry red chilli, slit green chilli, curry leaves, and onions. Sauté until the onions are translucent.
- 4Add the cooked banana cubes to the pan with the seasoning. Stir well for 5 minutes, then add grated coconut and give a quick stir to combine.
- 5Serve the Kaya Thoran hot as a side dish with rice.
