- 2 cups Dosa rice (Soak overnight.)
- 1 handful Boiled rice (Soak overnight.)
- 1 tsp Salt
- 1 tsp Baking soda

Instructions
- 1Soak the fenugreek seeds, dosa rice, and boiled rice separately overnight in ample water.
- 2Using a mixer grinder, grind the soaked fenugreek seeds separately. Then add the dosa rice and boiled rice to the grinder and process until a fine paste is achieved.
- 3Allow the batter to rest overnight at room temperature. It will ferment and nearly double in volume by the next morning.
- 4In the morning, add the baking soda and salt to the fermented batter. Mix thoroughly to combine.
- 5Heat a tawa over medium heat. Pour a ladleful of batter onto the tawa and spread it evenly to form a thin dosa. Cook until golden brown on one side, then flip and cook briefly on the other side. Serve hot with coconut chutney.
