Dahi Vada/Curd Vada
A popular South Indian snack made with deep-fried lentil fritters soaked in seasoned yogurt, garnished with mustard seeds and curry leaves.
Ingredients
- 1 cup Split urad dal
- 1 teaspoon Salt
- 2 units Green chillies
- 0.5 inch Ginger
- 2 sprigs Curry leaves
- 2 cups Oil
- 5 tablespoons Curd
- 3 tablespoons Sugar (Adjust to taste)
- 0.25 teaspoon Mustard seeds

Instructions
- 1Soak the split urad dal in water overnight to ensure it softens adequately.
- 2Drain the soaked dal and grind it in a mixer grinder without adding water, incorporating salt. Allow the batter to rest for 4 to 6 hours.
- 3Finely chop the green chillies, ginger, and curry leaves. Incorporate them into the prepared batter and mix thoroughly.
- 4Heat oil in a kadai over medium flame until it is hot enough for frying.
- 5Wet your palm with water, scoop a small amount of batter, shape it into a ball, make a hole in the center, and gently place it into the hot oil. Fry until golden but not overly brown.
- 6In a bowl, mix curd and sugar until well combined. Immerse the fried vadas in the curd mixture.
- 7In a small kadai, heat oil and splutter mustard seeds. Add curry leaves, let it cool, and pour over the dahi vada. Refrigerate before serving.
