Dahi Vada / Fritters in Curd

Delicious dahi vada/dahi balla recipe featuring fritters made from urad dal, served with curd and tamarind chutney.

Ingredients

  • 2 cups Split and Skinless Urad Dal
  • 1 teaspoon Salt
  • 1 cup Tamarind (raw)
  • 2 tablespoons Sugar
  • 3 cups Oil
  • 1 cup Curd (Plain yogurt can be used as a substitute)
  • 1 pinch Red Chilli Powder
  • 1 pinch Cumin Powder
  • 0.5 tablespoon Ginger Paste
  • 2 units Green Chillies

Instructions

  1. 1Rinse and soak 2 cups of urad dal in water for 5-6 hours or overnight.
  2. 2Grind the soaked dal to a smooth paste in a grinder, adding 2-3 tablespoons of water as needed. Transfer to a large bowl, add ginger paste, green chillies, and 1/2 teaspoon salt. Mix well and let it rest for 10-15 minutes.
  3. 3Heat oil in a pan. Drop 1 tablespoon of the batter into the hot oil, frying until light brown on both sides.
  4. 4Soak tamarind in a bowl for 1 hour. Crush with hands and sieve the paste into a cookware. Add 2 tablespoons of sugar, a pinch of salt, and cook for 2-3 minutes.
  5. 5Place the fried vadas on a plate. Pour smooth curd over them, add tamarind chutney, sprinkle with a pinch of salt, 2 pinches of roasted cumin powder, and a pinch of red chilli powder. Serve immediately.
