Egg Curry (Kerala style)
Egg curry is an easy curry, prepared with boiled eggs simmered in coconut milk based creamy gravy along with other Indian spices.
Instructions
- 1Finely chop the white onions and green chillies. Transfer them to a clay cooking pot.
- 2Heat the clay cooking pot over medium flame. Add salt, turmeric, and a small amount of water. Cook until the onions are soft.
- 3Beat the eggs and add them to the pot. Stir continuously to scramble the eggs with the onion mixture.
- 4Add the shredded coconut and coconut oil to the scrambled egg mixture. Mix thoroughly and remove from heat.
