Instructions

  1. 1In a pan, combine 2 cups of water and 2 cups of sugar. Stir well and bring to a boil. Add 1 teaspoon of lemon juice to help impurities rise to the surface, then skim off the impurities with a ladle. Continue boiling the syrup until it reaches a one-string consistency, approximately 7-10 minutes.
  2. 2In a bowl, mix 1 cup of gram flour, 1/2 cup of rice flour, a pinch of baking soda, and a pinch of turmeric. Gradually add water to form a batter that is neither too thin nor too thick.
  3. 3Heat oil in a deep pan. Pour a small amount of batter onto a boondi ladle and gently tap it so that tiny droplets of batter fall into the hot oil. Fry until golden brown. Repeat the process with the remaining batter.
  4. 4Allow the fried boondi to cool slightly. Add half of the boondi to the sugar syrup. Blend the remaining boondi slightly, ensuring it is not a paste, and add it to the syrup. Mix thoroughly.
  5. 5Add 1 tablespoon of ghee to the mixture. Using both hands, shape the mixture into balls. Serve these delicious laddoos.
