Instructions
- 1In a pan, combine 2 cups of water and 2 cups of sugar. Stir well and bring to a boil. Add 1 teaspoon of lemon juice to help impurities rise to the surface, then skim off the impurities with a ladle. Continue boiling the syrup until it reaches a one-string consistency, approximately 7-10 minutes.
- 2In a bowl, mix 1 cup of gram flour, 1/2 cup of rice flour, a pinch of baking soda, and a pinch of turmeric. Gradually add water to form a batter that is neither too thin nor too thick.
- 3Heat oil in a deep pan. Pour a small amount of batter onto a boondi ladle and gently tap it so that tiny droplets of batter fall into the hot oil. Fry until golden brown. Repeat the process with the remaining batter.
- 4Allow the fried boondi to cool slightly. Add half of the boondi to the sugar syrup. Blend the remaining boondi slightly, ensuring it is not a paste, and add it to the syrup. Mix thoroughly.
- 5Add 1 tablespoon of ghee to the mixture. Using both hands, shape the mixture into balls. Serve these delicious laddoos.
