  • 1 pinch Kesar (Saffron)
  • 3 cups Water
  • 4 cups Sugar
  • 6 cups Oil (For deep frying)
  • 0.5 cup Cashews (Optional, for garnish)
  • 0.5 cup Raisins (Optional, for garnish)

Instructions

  1. 1Combine besan, kesar, and water in a bowl. Mix thoroughly until the batter reaches a consistency similar to dosa batter.
  2. 2Heat oil in a deep kadai over medium flame. Using a perforated ladle, pour the besan batter through the holes into the hot oil to form small boondis. Fry until golden and set aside. Clean the ladle after each batch to ensure uniform shape.
  3. 3In a separate pot, combine sugar and water. Heat until the sugar dissolves and the syrup reaches a single-thread consistency.
  4. 4Add the fried boondis to the sugar syrup. Mix well and allow the boondis to absorb the syrup.
  5. 5Once the mixture is cool enough to handle, shape the boondi mixture into laddoos. Optionally, add fried cashews and raisins before shaping.
