Instructions
- 1Coat the tomatoes with a small amount of cooking oil. Heat a pan over medium flame, add the remaining oil, and fry the tomatoes with a lid on until they are fully softened and cooked through.
- 2Once the tomatoes are cooked, remove them from the pan and peel off the skins. Set the peeled tomatoes aside.
- 3In the same pan, sauté the dry red chillies and garlic cloves for 3-4 minutes until aromatic. Remove from the pan and mash them together.
- 4Finely chop the onion and green chilli. Mix them with the mashed garlic and red chilli mixture.
- 5Add the peeled tomatoes to the onion, garlic, and chilli mixture. Add the remaining oil and mix thoroughly.
- 6Add fresh coriander leaves to the mixture and serve the Tomato Bhorta with rice.
