Tomato Bhorta

A traditional Bengali side dish made with roasted tomatoes, spices, and fresh coriander, perfect to accompany rice.

Ingredients

  • 4 units Tomatoes
  • 1 teaspoon Cooking oil
  • 3 units Dry red chillies
  • 1 unit Onions
  • 1 bunch Coriander leaves
  • 1 teaspoon Salt
  • 2 units Garlic cloves
  • 1 unit Green chillies

Instructions

  1. 1Coat the tomatoes with a small amount of cooking oil. Heat a pan over medium flame, add the remaining oil, and fry the tomatoes with a lid on until they are fully softened and cooked through.
  2. 2Once the tomatoes are cooked, remove them from the pan and peel off the skins. Set the peeled tomatoes aside.
  3. 3In the same pan, sauté the dry red chillies and garlic cloves for 3-4 minutes until aromatic. Remove from the pan and mash them together.
  4. 4Finely chop the onion and green chilli. Mix them with the mashed garlic and red chilli mixture.
  5. 5Add the peeled tomatoes to the onion, garlic, and chilli mixture. Add the remaining oil and mix thoroughly.
  6. 6Add fresh coriander leaves to the mixture and serve the Tomato Bhorta with rice.
