Ingredients
- 12 whole Tomatoes, good-sized (Choose ripe, medium to large tomatoes)
- 0.25 teaspoon Ground chilies (Adjust to taste; can use cayenne pepper or red chili powder)
- 0.25 teaspoon Ground ginger
- 0.5 teaspoon Salt (Adjust to taste)
- 0.5 teaspoon Mustard oil, good quality (Can substitute with vegetable oil if mustard oil is unavailable)

Instructions

- 4Remove the tomatoes from the oven and let them cool slightly until they can be handled safely, about 5 minutes.
- 5Using a fork or potato masher, break down the roasted tomatoes into a coarse pulp in a mixing bowl. The skins can be removed if desired, or mashed in.
- 6Add the ground chilies, ground ginger, salt, and mustard oil to the mashed tomatoes. Mix well to combine all ingredients thoroughly.
- 7If desired, add a small squeeze of lemon juice (about 1 teaspoon) and mix well. Taste and adjust seasoning as needed.
- 8Serve the tomato burta warm or at room temperature as a side dish or condiment.
