Tomato Burta

A simple roasted tomato condiment or side dish with chilies, ginger, and mustard oil, typical of Anglo-Indian cuisine. The tomatoes are roasted until their skins crack, then mashed and seasoned.

Ingredients

  • 12 whole Tomatoes, good-sized (Choose ripe, medium to large tomatoes)
  • 0.25 teaspoon Ground chilies (Adjust to taste; can use cayenne pepper or red chili powder)
  • 0.25 teaspoon Ground ginger
  • 0.5 teaspoon Salt (Adjust to taste)
  • 0.5 teaspoon Mustard oil, good quality (Can substitute with vegetable oil if mustard oil is unavailable)
  • 1 teaspoon Lemon juice (Optional, to taste)

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2Wash the tomatoes and place them on a baking sheet or in a roasting pan.
  3. 3Place the tomatoes in the preheated oven and roast until the skins crack and the tomatoes are soft, about 25-30 minutes.
  4. 4Remove the tomatoes from the oven and let them cool slightly until they can be handled safely, about 5 minutes.
  5. 5Using a fork or potato masher, break down the roasted tomatoes into a coarse pulp in a mixing bowl. The skins can be removed if desired, or mashed in.
  6. 6Add the ground chilies, ground ginger, salt, and mustard oil to the mashed tomatoes. Mix well to combine all ingredients thoroughly.
  7. 7If desired, add a small squeeze of lemon juice (about 1 teaspoon) and mix well. Taste and adjust seasoning as needed.
  8. 8Serve the tomato burta warm or at room temperature as a side dish or condiment.
