RICE AND NUT LOAF

This Rice and Nut Loaf is a unique and satisfying vegetarian main course, perfect for a comforting meal. The combination of rice, breadcrumbs, and nuts creates a hearty texture, while the addition of parsley and egg adds freshness and binding. Ingredients

  • 1/2 cup Brown rice
  • 1/2 cup Bread crumbs
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 cup Chopped nuts (pecans or peanuts)
  • 1 tablespoon Chopped fresh parsley
  • 1 whole Egg

Instructions

  1. 1Boil the brown rice in water according to package directions until tender. Drain the rice and let it dry.
  2. 2In a bowl, combine the cooked rice, bread crumbs, salt, black pepper, chopped nuts, chopped parsley, and egg. Mix thoroughly.
  3. 3Pack the mixture into a bread pan to mold it. Turn the loaf from the pan into a baking pan. Bake in a preheated oven at 350°F (175°C) for 45 minutes, or until golden brown.
  4. 4Serve the rice and nut loaf with cream sauce or a puree of peas.
