Ingredients
- 1/3 cup Butter
- 1 cup Granulated Sugar (Originally "C" sugar. Modern equivalent is granulated sugar.)
- 1 Large Egg
- 1 1/2 cups All-Purpose Flour
- 1/2 teaspoon Ground Cinnamon
- 3 teaspoons Baking Powder
- 1/4 cup Chopped Nut Meats (e.g., walnuts or pecans)
- 1/4 teaspoon Salt
- 2/3 cup Milk
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon Lemon Extract
Instructions
- 1Preheat the oven to 350°F (175°C). Prepare a loaf pan by greasing it and lining it with parchment paper, leaving an overhang on the sides for easy removal. Measure out all ingredients.
- 2In a large bowl, cream together the butter and sugar until light and fluffy. This can be done with a hand mixer or a stand mixer.
- 3Add the egg and mix well until combined.
- 4In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
- 5Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined. Do not overmix.
- 6Stir in the vanilla extract, lemon extract, and chopped nut meats.
- 7Pour the batter into the prepared loaf pan. Bake for 30 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
