FLEMISH CARROTS
This classic Flemish Carrots recipe offers a simple yet flavorful way to prepare carrots, making them tender and delicious. Ingredients
- 1 quart Carrots
- 1 quart Water
- 1 teaspoon Salt
- 2 tablespoons Butter or Olive Oil (Originally fat. Substituted with butter or olive oil for modern preference.)
- 1 small Onion
- 1 teaspoon Sugar
- 1/4 teaspoon Salt
- 1/8 teaspoon White Pepper
- 1 1/2 cups Soup Stock
- 1 teaspoon Chopped Parsley
Instructions
- 1Scrape and slice the carrots. In a pot, bring 1 quart of water to a boil. Add 1 teaspoon of salt. Cook the carrots in the boiling water until tender. Drain the carrots.
- 2Heat 2 tablespoons of butter or olive oil in a pan. Add the small onion and brown lightly.
- 3Add the cooked carrots to the pan with the onion. Season with 1 teaspoon of sugar, 1/4 teaspoon of salt, and 1/8 teaspoon of white pepper. Shake well over the heat for 10 minutes. Add 1 1/2 cups of soup stock, cover, and simmer for 30 minutes.
- 4Add 1 teaspoon of chopped parsley and serve hot.
