EGGLESS GINGER GEMS

Ingredients
- 1/2 cup Molasses
- 1/2 cup Granulated Sugar
- 1 tablespoon Butter
- 1/2 teaspoon Ground Ginger
- 1/2 teaspoon Ground Cinnamon
- 1/2 cup Milk
- 2 1/2 cups All-Purpose Flour
- 2 teaspoons Baking Powder
- 1/4 cup Currants or Seeded Raisins
Instructions
- 1In a small saucepan, combine the molasses, sugar, and butter. Warm slightly over low heat until the butter is melted. Remove from heat and beat the mixture well for about 10 minutes, until it becomes light and fluffy.
- 2Add the ginger and cinnamon to the molasses mixture and stir to combine. Gradually add the milk, stirring until incorporated.
- 3In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the currants or raisins, if using.
- 4Preheat oven to 350°F (175°C). Grease gem pans generously. Fill each gem pan about 2/3 full with the batter. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
