Simple Tomato Sauce
A classic, minimalist tomato sauce that emphasizes the pure flavor of ripe tomatoes. The original recipe advises against complex seasonings like onions or spices, relying only on butter, salt, and pepper for a wholesome and pure result.
Ingredients
- 12 whole Ripe tomatoes (Choose very ripe, red tomatoes for best flavor)
- 2 tbsp Butter (Unsalted preferred)
- 1 tsp Salt (Adjust to taste)
- 0.5 tsp Black pepper (Freshly ground)
Instructions
- 1Wash the tomatoes thoroughly. Cut off the stalks and slice the tomatoes in half horizontally. Gently squeeze each half to remove the seeds (pips) and excess watery juice.
- 2Place the prepared tomatoes into a stew-pan or heavy-bottomed pot. Add the butter. Cover and let them stew over medium-low heat until they are completely tender and broken down.
- 3Remove the pan from the heat. Rub the stewed tomato mixture through a wire sieve or food mill into a clean bowl or pot. This will remove the skins and any remaining seeds, leaving a smooth puree.
- 4Season the smooth sauce with salt and pepper to taste. If the sauce has cooled too much during sieving, return it to the pan and warm gently before serving.
