Tomato Sauce (Four portions)

Ingredients
- 1 C Tomatoes
- 1 slice Onion
- 4 Bay leaves
- 4 Cloves
- 1/2 t Sugar
- 1/2 C Water
- 2 T Butter
- 2 T Flour
- 1/2 t Salt
Instructions
- 1In a saucepan, combine the tomatoes, onion slice, bay leaves, cloves, sugar, and water. Simmer over medium heat for 15 minutes, stirring occasionally.
- 2Remove the bay leaves. Rub the tomato mixture through a strainer to remove the solids, leaving the juice and pulp.
- 3In a separate saucepan, melt the butter. Add the flour and salt, stirring constantly to create a roux.
- 4Add the strained tomato juice and pulp to the roux. Cook over medium heat, stirring frequently, until the sauce reaches your desired consistency, about 10 minutes.
