Tomato Sauce (Three portions)
This classic tomato sauce recipe, dating back to 1900, offers a rich and savory flavor profile, perfect for enhancing any dish. Ingredients
- 1 C Tomatoes, cut up
- 1/8 t Onion salt (Originally 'slice of onion' or '1/8 t-onion salt'. Using onion salt for convenience.)
- 1/2 C Water
- 2 Bay leaves
- 2 T Butter
- 1 t Sugar
- 2 T Flour
- 1/8 t Ground cloves
- 1/3 t Salt
Instructions
- 1In a saucepan, combine the tomatoes, water, bay leaves, sugar, cloves, and onion salt. Simmer for 15 minutes, stirring occasionally.
- 2Strain the tomato mixture, pressing out all the pulp. Discard the solids. In a separate pan, melt the butter.
- 3Add the flour to the melted butter and blend well. Slowly add the strained tomato mixture and salt. Cook for 1 minute, stirring constantly.
