Mint Sauce
A classic British mint sauce made with fresh mint leaves, vinegar, and brown sugar. Perfect accompaniment for roasted lamb or grilled meats.
Ingredients
- 1 tablespoon Fresh mint leaves, young, picked and washed (Minced after washing)
- 4 tablespoons Vinegar (White wine vinegar or malt vinegar work well)
- 1 teaspoon Brown sugar (Can adjust to taste)

Instructions
- 1Pick the young mint leaves from the stems and wash them thoroughly under cold running water. Pat dry with a clean kitchen towel.
- 2Finely mince the washed mint leaves using a sharp knife until you have 1 tablespoon of minced mint.
- 3Place the minced mint into a sauce-tureen or small serving bowl. Add the vinegar and brown sugar.
- 4Stir well to combine all ingredients and dissolve the sugar. Let stand for 5-10 minutes before serving to allow flavors to meld.
