Green Mint Juice Extract
A fresh mint extract made by pounding mint leaves with either water for immediate use or brandy for longer storage. This concentrated mint juice can be used for flavoring beverages, desserts, and sauces.
Ingredients
- 6 large stalks Fresh mint, large stalks with leaves picked and cleaned (Use good quality fresh mint)
- 1 dessertspoon Water or brandy (Use water for immediate use, brandy if keeping for a few days)
- 1 dessertspoon Additional water or brandy for second extraction (Optional, for extracting more juice)

Instructions
- 1Pick the leaves from 6 large stalks of fresh mint and clean them thoroughly, discarding any damaged or discolored leaves.
- 2Place the cleaned mint leaves in a mortar and add 1 dessertspoon of water (for immediate use) or brandy (if keeping for a few days). Pound the leaves thoroughly until they are well bruised and the liquid turns bright green.
- 3Transfer the pounded mint mixture into a piece of muslin cloth. Gather the edges and squeeze firmly to extract all the green juice into a clean container.
- 4For a second extraction, return the squeezed mint leaves to the mortar, add another dessertspoon of water or brandy, pound again briefly, then squeeze through the muslin once more to extract additional juice.
