Green Mint Vinegar
A homemade infused vinegar made by steeping fresh mint leaves in vinegar for 2-3 weeks. Perfect for serving with lamb or kid when fresh mint is unavailable.
Ingredients
- 2 cups loosely packed Fresh mint leaves, clean (Enough to loosely fill a 16-ounce bottle)
- 2 cups White vinegar or white wine vinegar (Good quality vinegar)

Instructions
- 1Wash and thoroughly dry fresh mint leaves. Ensure they are completely clean and free of moisture to prevent spoilage.
- 2Place the clean mint leaves into a wide-mouthed bottle or jar, filling it loosely. Do not pack the leaves tightly.
- 3Pour vinegar over the mint leaves to fill the bottle completely. Seal tightly with a cork or non-reactive lid.
- 4Store the sealed bottle in a cool, dark place for 2 to 3 weeks to allow the mint flavor to infuse into the vinegar.
- 5After 2-3 weeks, pour the vinegar through a fine-mesh strainer into a clean bottle, leaving the mint leaves behind. Discard the used mint leaves.
- 6Cork or cap the bottle tightly and store in a cool, dark place. The mint vinegar will keep for up to 6 months. Serve with lamb or kid when fresh mint is not available.
