Shrimp Salad in Cucumber Boats
A refreshing salad served in cucumber boats.
Ingredients
- 2 medium Cucumbers
- 1 pound Shrimp, cooked and peeled
- 1/2 cup Mayonnaise
- 4 leaves Lettuce leaves or watercress (Quantity estimated (not specified in original recipe))
Instructions
- 1Pare the cucumbers and cut them in halves lengthwise. Remove the seeds.
- 2Steam the cucumber halves until tender. Chill them.
- 3Arrange the chilled cucumber halves on lettuce leaves or a bed of watercress. Clean and marinate the shrimps. If large, divide into two or three pieces. Mix the shrimp with mayonnaise and place in the cucumber boats. Decorate with stars of mayonnaise and whole shrimps.
