Cucumber Salad for Fish Course

Ingredients

- 3 tablespoons Cider vinegar
- 6 tablespoons Olive oil

Instructions
- 1Using a vegetable peeler or knife, remove the outer rind from the cucumbers. Slice the cucumbers thinly.
- 2Place the cucumber slices in a bowl of ice water and let them chill for about 10 minutes. This will help them crisp up.
- 3In a small bowl, whisk together the cider vinegar, olive oil, salt, and paprika.
- 4Rub the inside of the salad bowl with the cut side of the onion.
