Cucumber Salad (German style)

Cucumber Salad (German style)

A refreshing cucumber salad with a German-style French dressing.

Ingredients

  • 2 large Cucumber
  • 1 tablespoon Salt (For the ice water. Quantity estimated (not specified in original recipe).)
  • 4 cups Ice water (Quantity estimated (not specified in original recipe).)
  • 1/4 cup French dressing (Quantity estimated (not specified in original recipe).)
  • 2 tablespoons Oil (Quantity estimated (not specified in original recipe).)
  • 1/2 teaspoon Salt (For French dressing. Quantity estimated (not specified in original recipe).)
  • 1/4 teaspoon Black pepper (For French dressing. Quantity estimated (not specified in original recipe).)
  • 1/8 teaspoon Cayenne pepper or paprika (For French dressing. Quantity estimated (not specified in original recipe).)
  • 2 tablespoons Vinegar or lemon juice (For French dressing. Quantity estimated (not specified in original recipe).)

Instructions

  1. 1Peel the cucumbers and cut them into thin slices. Cut each slice round and round to form a long, narrow curling strip.
  2. 2Place the cucumber strips in salted ice water for 2 hours. This helps to crisp the cucumbers. Americans may omit the salt.
  3. 3In a small bowl, mix the salt, pepper, and cayenne pepper (or paprika). Add the oil and mix again. Then add the vinegar or lemon juice, a few drops at a time, and beat until an emulsion is formed.
  4. 4Drain the cucumber strips and dry them in a soft cloth. In a bowl, toss the cucumbers first in the oil, then add the condiments (salt, pepper, cayenne/paprika), and lastly the vinegar. Serve immediately.
