Cucumber Salad (German style)
A refreshing cucumber salad with a German-style French dressing.
Ingredients
- 2 large Cucumber
- 1 tablespoon Salt (For the ice water. Quantity estimated (not specified in original recipe).)
- 4 cups Ice water (Quantity estimated (not specified in original recipe).)
- 1/4 cup French dressing (Quantity estimated (not specified in original recipe).)
- 2 tablespoons Oil (Quantity estimated (not specified in original recipe).)
- 1/2 teaspoon Salt (For French dressing. Quantity estimated (not specified in original recipe).)
- 1/4 teaspoon Black pepper (For French dressing. Quantity estimated (not specified in original recipe).)
- 1/8 teaspoon Cayenne pepper or paprika (For French dressing. Quantity estimated (not specified in original recipe).)
- 2 tablespoons Vinegar or lemon juice (For French dressing. Quantity estimated (not specified in original recipe).)
Instructions
- 1Peel the cucumbers and cut them into thin slices. Cut each slice round and round to form a long, narrow curling strip.
- 2Place the cucumber strips in salted ice water for 2 hours. This helps to crisp the cucumbers. Americans may omit the salt.
- 3In a small bowl, mix the salt, pepper, and cayenne pepper (or paprika). Add the oil and mix again. Then add the vinegar or lemon juice, a few drops at a time, and beat until an emulsion is formed.
- 4Drain the cucumber strips and dry them in a soft cloth. In a bowl, toss the cucumbers first in the oil, then add the condiments (salt, pepper, cayenne/paprika), and lastly the vinegar. Serve immediately.
