Mashed Carrots

A simple and comforting side dish of mashed carrots, seasoned with butter, salt, and pepper. Can be mixed with mashed turnips for a colorful and flavorful variation.

Ingredients

  • 1 pound Carrots (About 4 medium carrots)
  • 2 tablespoons Butter (Unsalted)
  • 0.25 teaspoon Salt (Or to taste)
  • 0.125 teaspoon Black Pepper (Freshly ground, or to taste)
  • 0.5 pound Turnips (Optional, for mixing)

Instructions

  1. 1Wash, peel, and chop the carrots into 1-inch pieces. If using turnips, wash, peel, and chop them similarly.
  2. 2Place the chopped carrots (and turnips, if using) in a pot and cover with water. Bring to a boil, then reduce heat and simmer until the carrots are very tender, about 20-30 minutes.
  3. 3Drain the carrots (and turnips) well. Use a potato masher or ricer to mash the carrots until smooth. Alternatively, rub them through a wire sieve or food mill for an extra smooth texture.
  4. 4Stir in the butter, salt, and pepper. Taste and adjust seasoning as needed. Serve hot.
