Frozen Apricots

Ingredients
- 2 cups Apricots
- 2 tablespoons Lemon juice
- 1 cup Water
- 1 cup Sugar
- 1 large Egg white
Instructions
- 1Peel and quarter the apricots.
- 2Combine the apricots, sugar, and water in a saucepan. Cook over medium heat until the apricots are soft, about 5 minutes.
- 3Remove from heat and let cool. Add the lemon juice.
- 4Pour the mixture into a freezer-safe container and freeze until half frozen.
- 5In a separate bowl, beat the egg white until stiff peaks form. Add the beaten egg white to the half-frozen apricot mixture and continue freezing until stiff. More sugar may be added if desired.
