Bettina's Sponge
Bettina's Sponge is a light and refreshing dessert, perfect for a warm day. This classic recipe combines the delicate flavors of gelatin, whipped cream, and lemon juice with the crunch of coconut macaroons and candied cherries. The result is a creamy, sweet, and satisfying treat that's sure to please.
Ingredients
- 2 teaspoons Granulated gelatin
- 1 cup Boiling water
- 1 tablespoon Cold water
- 1/2 cup Heavy cream, whipped
- 4 tablespoons Granulated sugar
- 6 Coconut macaroons, crushed
- 1 tablespoon Lemon juice
- 8 Candied cherries, cut fine
- 2 tablespoons Chopped nuts
Instructions
- 1In a small bowl, combine the cold water and gelatin. Let it stand for 5 minutes to soften.
- 2Pour the boiling water over the softened gelatin and stir until completely dissolved. Add the sugar and stir until dissolved.
- 3Let the gelatin mixture cool slightly, then fold in the whipped cream, crushed macaroons, lemon juice, candied cherries, and chopped nuts.
- 4Pour the mixture into individual serving dishes or a large bowl. Chill in the refrigerator for at least 30 minutes, or until set. Serve cold.
