Ingredients

  • 4 tablespoons Pearl tapioca
  • 3 tablespoons Cold water
  • 1 cup Boiling water
  • 2 Sour apples
  • 1/8 teaspoon Salt
  • 4 tablespoons Sugar
  • 1/4 teaspoon Vanilla extract

Instructions

  1. 1In the upper part of a double boiler, soak the pearl tapioca in the cold water for 10 minutes.
  2. 2Add the boiling water and salt to the tapioca mixture. Cook, stirring occasionally, until the tapioca becomes transparent, approximately 20 minutes.
  3. 3Finely dice the apples. In a small baking dish, mix the diced apples thoroughly with the sugar.
  4. 4Pour the cooked tapioca mixture over the sugared apples in the baking dish. Bake in a preheated moderate oven at 350°F (175°C) until the apples are soft, approximately 25 minutes. The baking time may vary depending on the apple variety.
