Apple Tapioca (Two portions)

Ingredients
- 4 tablespoons Pearl tapioca
- 3 tablespoons Cold water
- 1 cup Boiling water
- 2 Sour apples
- 1/8 teaspoon Salt
- 4 tablespoons Sugar
- 1/4 teaspoon Vanilla extract
Instructions
- 1In the upper part of a double boiler, soak the pearl tapioca in the cold water for 10 minutes.
- 2Add the boiling water and salt to the tapioca mixture. Cook, stirring occasionally, until the tapioca becomes transparent, approximately 20 minutes.
- 3Finely dice the apples. In a small baking dish, mix the diced apples thoroughly with the sugar.
- 4Pour the cooked tapioca mixture over the sugared apples in the baking dish. Bake in a preheated moderate oven at 350°F (175°C) until the apples are soft, approximately 25 minutes. The baking time may vary depending on the apple variety.
