Aviyal

Aviyal is a traditional South Indian side dish prepared during festivals, featuring a medley of vegetables cooked with coconut and spices.

Ingredients

  • 2 cups Mixed vegetables (Includes drumstick, brinjal, long yard bean, elephant foot yam, etc.)
  • 6 tablespoons Coconut, grated
  • 1 teaspoon Jeera (cumin seeds)
  • 1 unit Green chillies
  • 0.5 unit Onions (Medium size)
  • 2 sprigs Curry leaves
  • 1 tablespoon Coconut oil
  • 0.75 cup Curd (plain yogurt)
  • 0.5 teaspoon Turmeric
  • 1 teaspoon Salt (Adjust to taste)

Instructions

  1. 1Cut the vegetables into thin, long pieces approximately 1 inch in length. Use a pressure cooker to cook the vegetables with a small amount of water, turmeric, and salt. Cook until tender, giving two whistles. Note that elephant foot yam may require longer cooking time, so partially cook it before adding the other vegetables.
  2. 2Coarsely grind the grated coconut, jeera, onion, green chilli, and curry leaves using a mixer grinder. Add this mixture to the cooked vegetables and bring to a boil.
  3. 3Beat the curd briefly in a mixer and add it to the boiling vegetable mixture. Allow the curd to come to a boil, then turn off the heat.
  4. 4Drizzle coconut oil over the aviyal and add fresh curry leaves. Mix everything together thoroughly.
  5. 5The aviyal is ready to be served. Enjoy it as a side dish with rice or any main course.
