Vegetable Mash
A simple mashed vegetable dish, likely using steamed vegetables that are then mashed together. Based on the sequential context with steamed peas, this would have been a basic vegetable side dish.
Ingredients
- 4 cups Mixed vegetables (such as peas, carrots, turnips, or potatoes), peeled and chopped (Choose vegetables that mash well; root vegetables work best)
- 8 leaves Lettuce leaves, large (For steaming the vegetables)
- 2 tablespoons Butter (Optional, for enriching the mash)
- 0.5 teaspoon Salt (To taste)
- 0.25 teaspoon Black pepper, freshly ground (To taste)

- 1Peel and chop the vegetables into uniform pieces, about 1-inch cubes for even cooking.
- 2Close-pack the chopped vegetables securely in the lettuce leaves, wrapping them completely to create a sealed package.
- 3Place the lettuce-wrapped package into a stewpan or large pot over moderate heat. Steam for 30 minutes until the vegetables are completely tender.
- 4Carefully remove the lettuce package from the pot and unwrap. Discard the lettuce leaves. Transfer the steamed vegetables to a bowl and mash thoroughly with a potato masher or fork until smooth.
- 5Add butter, salt, and pepper to the mashed vegetables. Mix well until the butter is melted and incorporated. Taste and adjust seasoning as needed. Serve hot.
