Instructions

  1. 1Peel and chop the vegetables into uniform pieces, about 1-inch cubes for even cooking.
  2. 2Close-pack the chopped vegetables securely in the lettuce leaves, wrapping them completely to create a sealed package.
  3. 3Place the lettuce-wrapped package into a stewpan or large pot over moderate heat. Steam for 30 minutes until the vegetables are completely tender.
  4. 4Carefully remove the lettuce package from the pot and unwrap. Discard the lettuce leaves. Transfer the steamed vegetables to a bowl and mash thoroughly with a potato masher or fork until smooth.
