Spinach Dal | दाल पालक

Ingredients
- 1 cup Spinach, finely chopped
- 1 tablespoon Ghee
- 1 sprig Curry leaves
- 3 units Green chillies, slit
- 1 unit Onion, finely chopped
- 2 tablespoons Coriander leaves, finely chopped
- 1 pinch Asafoetida
- 0.5 teaspoon Garam masala
- 1.25 teaspoons Turmeric powder (Divided use)
- 0.5 teaspoon Red chilli powder
- 1 teaspoon Mustard seeds
- 1 teaspoon Jeera (cumin seeds)
- 1 cup Toor dal
- 3 cups Water (For cooking dal)
- 1 teaspoon Salt (Adjust to taste)
- 1 teaspoon Ginger, finely chopped
- 1 teaspoon Garlic, finely chopped

Palak Sabzi (Spinach Sabzi)
A flavorful Indian spinach dish, combining pureed and chopped spinach with spices, tomatoes, and a touch of curd, finished with a fragrant ghee tempering.
Instructions
- 1Rinse the toor dal thoroughly. In a pressure cooker, combine the dal with 3 cups of water, a pinch of asafoetida, and 3/4 teaspoon of turmeric powder. Cook under pressure for 4-5 whistles until the dal is soft.
- 2In a pan, heat the ghee. Add mustard seeds and jeera, allowing them to splutter. Add curry leaves and slit green chillies, sautéing until aromatic.
- 3Add the chopped onion to the pan and sauté until translucent. Stir in the ginger and garlic, cooking for 2-3 minutes. Add 1/2 teaspoon of turmeric powder and red chilli powder, cooking the spices briefly.
- 4Add the cooked dal to the pan, stirring to combine. Ensure there are no lumps. Add garam masala, salt to taste, and coriander leaves. Finally, add the chopped spinach, mixing well. Cook for an additional minute before removing from heat.
