Vegetable Pulav, Karnataka Style
A delightful and healthy rice dish featuring a variety of vegetables, prepared in the traditional Karnataka style using an Instant Pot.
Ingredients
- 2 tbsp Ghee
- 1 tsp Cumin seeds
- 2 unit Star anise
- 2 unit Bay leaves
- 1 unit Onions
- 1 bunch Green beans
- 2 unit Tomatoes
- 2 unit Carrot (Medium sized)
- 1 cup Green peas
- 2 cup Basmati Rice
- 1 bunch Coriander leaves
- 0.75 cup Coconut (grated)
- 1 handful Coriander leaves (Around 6-12 strands)
- 1 tsp Fennel seeds
- 5 unit Green chillies
- 0.5 inch Ginger
- 2 unit Garlic cloves
- 4 unit Cloves
- 0.5 inch Cinnamon stick
- 1 tsp Coriander seeds
- 1 tsp Poppy seeds
- 2 cup Water
- 1 handful Mint

Instructions
- 1Grind all ingredients listed under the 'For Grinding' section into a coarse paste using a mixer grinder.
- 2Activate the Instant Pot on sauté mode. Once heated, add ghee, cumin seeds, star anise, and bay leaves. Stir for 30 seconds until aromatic.
- 3Add the onions to the Instant Pot and sauté for a few minutes until they become translucent.
- 4Incorporate the green beans, carrots, peas, and tomatoes into the pot. Stir and sauté for a minute.
- 5Add the prepared spice paste to the vegetable mixture. Mix thoroughly and sauté until the raw aroma dissipates.
- 6Top the mixture with ghee, then add the basmati rice and water. Mix well to combine.
- 7Seal the Instant Pot and cook on manual mode for 7 minutes. Allow the pressure to release naturally.
- 8Garnish the cooked pulav with coriander leaves and serve hot.
