Vegetable Pulav
A flavorful and aromatic Indian rice dish made with a variety of vegetables, spices, and soya chunks, cooked to perfection in a pressure cooker.
Ingredients
- 3 tbsp Sunflower oil
- 1 inch Cinnamon stick
- 3 unit/count Bay leaves
- 5 unit/count Cloves
- 4 unit/count Green cardamom pods
- 2 inch Ginger (Chopped)
- 6 unit/count Green chillies (Chopped)
- 12 unit/count Garlic flakes (Chopped)
- 2 unit/count Tomatoes (Diced)
- 1 bunch Coriander leaves (Chopped)
- 12 unit/count Green beans (Cut into 1-inch pieces)
- 3 unit/count Carrot (Cut into 1-inch pieces)
- 1 cup Green peas
- 6 unit/count Soya chunk (Soaked and squeezed)
- 10 unit/count Double beans
- 2 cup White rice (Soaked for 5 minutes)
- 4 cup Water
Instructions
- 1Soak the rice for 5 minutes. Cut the beans and carrots into 1-inch pieces. Chop the coriander leaves and dice the tomatoes.
- 2Soak the soya chunks in hot water. After 10 minutes, squeeze out the water. Chop the garlic, ginger, and green chillies.
- 3Heat a pressure cooker and add the ghee and sunflower oil. Add the cinnamon, cloves, bay leaves, and cardamom. Sauté well, then add the chopped ginger, garlic, and green chillies. Sauté for a few minutes until fragrant.
- 4Add all the vegetables, soya chunks, and tomatoes to the pressure cooker. Sauté well, then add the chopped coriander leaves. Secure the lid and cook for three whistles.
