Sprouted Moong Dal Curry | Instant Pot
A simple and nutritious sprouted moong dal curry made in an Instant Pot. This one-pot dish is perfect for a quick and healthy meal.
Ingredients
- 1 tbsp Oil
- 1 tsp Cumin seeds
- 4 count Green chillies
- 1 tbsp Ginger garlic paste
- 1 count Onions
- 2 count Tomatoes
- 1 cup Green Moong (Soaked overnight)
- 1 handful Coriander leaves
- 2 tsp Lemon juice (As needed)
- 1 tsp Turmeric
- 1.5 tsp Red chilli powder
- 1 tbsp Coriander powder
- 1 tbsp Garam masala
- 1 to taste Salt
- 2 cups Water (Enough to cover the contents)

Sugiyan
Sugiyan is a traditional Kerala dish made with green moong, coconut, and jaggery, deep-fried to perfection. It is a delightful snack or dessert that combines the health benefits of green moong with the sweetness of jaggery.
Instructions
- 1Soak the green moong beans overnight. Optionally, allow them to sprout before cooking.
- 2Set the Instant Pot to sauté mode. Add oil and heat it. Once hot, add cumin seeds and green chillies. Sauté until the chillies are cooked, then add ginger garlic paste and sauté until the raw aroma dissipates.
- 3Add onions to the pot and sauté until translucent. Then add tomatoes and continue to sauté until they become mushy.
- 4Stir in the turmeric, red chilli powder, coriander powder, and garam masala. Add the soaked green moong beans and sauté for a minute.
- 5Add water and salt to the pot. Set the Instant Pot to manual mode and cook for 6 minutes. Once done, release the pressure manually.
- 6Garnish the curry with coriander leaves and a squeeze of lemon juice before serving.
