Sugiyan
Sugiyan is a traditional Kerala dish made with green moong, coconut, and jaggery, deep-fried to perfection. It is a delightful snack or dessert that combines the health benefits of green moong with the sweetness of jaggery.
Ingredients
- 1 cup Green Moong (Whole Mung Beans, Green Gram, Sabut Moong)
- 1 cup Coconut, shredded
- 1.5 cups Jaggery (Powdered jaggery)
- 1.5 cups Water
- 0.25 cup Maida (All purpose flour, Refined flour)
- 1 pinch Salt
- 2 cups Oil (For deep frying)

- 1Soak the green moong in water overnight. Drain and transfer to a pressure cooker. Cook until tender, allowing the pressure to release naturally.
- 2In a kadai, add the cooked green moong after draining excess water. Stir in the shredded coconut and cook for 3-4 minutes. Add the jaggery and continue cooking until the mixture thickens and leaves the sides of the pan.
- 3In a bowl, combine maida and a pinch of salt. Gradually add water to form a semi-thick batter. Set aside.
- 4Once the moong mixture has cooled, shape it into balls. Dip each ball into the maida batter to coat, then deep fry in hot oil until golden brown. Adjust the flame between medium and high as needed.
