Lauki (Bottle Gourd) Moong Dal | Instant Pot

Lauki and Moong dal cooked in an Instant Pot. You can enjoy this curry with hot white rice.

Ingredients

  • 1 unit Lauki (Bottle gourd)
  • 1 unit Onions
  • 2 units Tomatoes
  • 4 units Green chillies
  • 2 teaspoons Ginger garlic paste
  • 1 teaspoon Turmeric
  • 2 teaspoons Red chilli powder
  • 1 pinch Salt
  • 2 tablespoons Ghee
  • 1 unit Bay leaves
  • 1 bunch Coriander leaves
  • 1 teaspoon Mustard seeds
  • 3 units Dry red chillies
  • 0.75 cup Moong Dal
  • 2 cups Water (Enough to cover all ingredients)

Instructions

  1. 1Clean the Moong dal and set it aside. Cut the lauki into small cubes.
  2. 2Set the Instant Pot to sauté mode and add ghee. Once hot, add mustard seeds and allow them to splutter. Add the bay leaf and sauté briefly.
  3. 3Add the onions to the pot and sauté for a few minutes. Stir in the ginger garlic paste and continue to sauté until the raw aroma dissipates. Add the tomatoes and sauté for a few more minutes.
  4. 4Add the Moong dal and sauté for a minute. Then add the lauki, turmeric, 1 teaspoon of red chilli powder, and salt. Sauté for another minute.
  5. 5Add enough water to cover all ingredients. Set the Instant Pot to manual mode and pressure cook on high for 5 minutes. Allow the pressure to release naturally.
  6. 6Temper with ghee, dry red chillies, mustard seeds, and 1 teaspoon of red chilli powder. Garnish with coriander leaves and serve with hot rice.
