Lauki (Bottle Gourd) Moong Dal | Instant Pot
Lauki and Moong dal cooked in an Instant Pot. You can enjoy this curry with hot white rice.
Ingredients
- 1 unit Lauki (Bottle gourd)
- 1 unit Onions
- 2 units Tomatoes
- 4 units Green chillies
- 2 teaspoons Ginger garlic paste
- 1 teaspoon Turmeric
- 2 teaspoons Red chilli powder
- 1 pinch Salt
- 2 tablespoons Ghee
- 1 unit Bay leaves
- 1 bunch Coriander leaves
- 1 teaspoon Mustard seeds
- 3 units Dry red chillies
- 0.75 cup Moong Dal
- 2 cups Water (Enough to cover all ingredients)
Instructions
- 1Clean the Moong dal and set it aside. Cut the lauki into small cubes.
- 2Set the Instant Pot to sauté mode and add ghee. Once hot, add mustard seeds and allow them to splutter. Add the bay leaf and sauté briefly.
- 3Add the onions to the pot and sauté for a few minutes. Stir in the ginger garlic paste and continue to sauté until the raw aroma dissipates. Add the tomatoes and sauté for a few more minutes.
- 4Add the Moong dal and sauté for a minute. Then add the lauki, turmeric, 1 teaspoon of red chilli powder, and salt. Sauté for another minute.
- 5Add enough water to cover all ingredients. Set the Instant Pot to manual mode and pressure cook on high for 5 minutes. Allow the pressure to release naturally.
- 6Temper with ghee, dry red chillies, mustard seeds, and 1 teaspoon of red chilli powder. Garnish with coriander leaves and serve with hot rice.
