Instructions
- 1In a pan over medium heat, bring one cup of milk to a boil. Add 2 tablespoons of lemon juice to curdle the milk. Drain the curdled milk using a clean white cloth, squeezing out all the water to obtain paneer. Set aside for 30 minutes.
- 2After resting, knead the paneer in a mixing bowl to form a smooth dough. Shape into small balls and flatten to a diameter of 2 inches. Set aside.
- 3In a pan, combine half a cup of sugar with one cup of water. Bring to a boil, then add the flattened paneer balls. Cook for 2 minutes over medium heat, then remove the paneer from the solution.
- 4In a pan over medium heat, combine one cup of milk, half a cup of sugar, 1/2 teaspoon of cardamom powder, 1/2 teaspoon of yellow food colour (optional), and 3 tablespoons of condensed milk. Stir continuously until the mixture thickens and becomes creamy.
- 5Transfer the thickened milk sauce to a bowl and refrigerate for 1 hour to allow it to cool and thicken further.
- 6In a serving tray, arrange the paneer balls in a single layer. Pour the chilled milk sauce over the paneer and garnish with chopped cashews.
- 7Serve the Rasmalai chilled. Enjoy this delicious and sweet Indian dessert.
