Instructions
- 1In a pressure cooker, combine the beef, 1 teaspoon of salt, 0.5 teaspoon of turmeric powder, and 0.25 teaspoon of garam masala. Cook for 20-25 minutes until the beef is tender. Allow it to cool, then crush the beef using a mixer grinder, ensuring it remains coarse.
- 2In a pan over medium heat, add 2 tablespoons of vegetable oil. Sauté the chopped onions, green chillies, ginger paste, remaining salt, turmeric powder, garam masala, and black pepper powder until the onions are translucent.
- 3Add the cooked and crushed beef to the pan with the sautéed ingredients. Mix thoroughly to combine. The filling is now ready.
- 4In a mixing bowl, combine the all-purpose flour, 1 teaspoon of salt, and 2 tablespoons of vegetable oil. Gradually add warm water and knead to form a soft dough.
- 5Divide the dough into small balls and roll each into a 4-inch diameter circle. Place the beef filling on one circle, cover with another, and cut into four equal parts using a knife or pathiri cutter.
- 6In a pan, heat vegetable oil over medium heat. Fry the pathiris until they are golden brown on both sides.
- 7Serve the Malabar irachi pathiri hot, accompanied by a cup of tea.
