Koonthal Varattiyadh/Squid Roast
Spicy and yummy squid roast with homemade fish masala powder.
Ingredients
- 1000 gms Squid (Clean the squid well and cut into small pieces.)
- 3 unit/count Onions (Finely chopped)
- 3 unit/count Tomatoes (Finely chopped)
- 1 tsp Ginger garlic paste
- 3 unit/count Green chillies (Finely chopped)
- 1 handful Coriander leaves
- 2 tsp Turmeric powder
- 1 tbsp Salt
- 2 tbsp Red chilli powder
- 4 tbsp Coconut oil
- 2 tbsp Cumin seeds
- 1 tbsp Coriander seeds
- 0.5 tsp Fennel seeds
- 0.5 tbsp Mustard seeds
- 0.5 tbsp Carrom seeds
- 0.5 tbsp Fenugreek seeds
- 0.5 tbsp Black peppercorns
- 3 unit/count Dry red chillies
- 0.5 handful Curry leaves
Instructions
- 1In a pan, cook the cleaned squid with a little water, salt, and turmeric powder for 10-15 minutes.
- 2In a pan over medium heat, add coconut oil. Once hot, add onions, tomatoes, green chillies, ginger garlic paste, and salt. Sauté until the onions are translucent.
- 3Add turmeric powder and red chilli powder to the sautéed vegetables. Mix well and continue to cook until the spices are well roasted.
- 4In a pan over low heat, dry roast cumin seeds, coriander seeds, fennel seeds, mustard seeds, carrom seeds, fenugreek seeds, black peppercorns, and dry red chillies for 1-2 minutes. Allow to cool, then grind into a fine powder using a mixer grinder.
- 5Add the prepared fish masala powder to the onion mixture and mix thoroughly.
- 6Add the cooked squid to the masala mixture and mix well. Adjust salt as needed. Add coriander leaves and cook for an additional 1-2 minutes before turning off the heat.
- 7Serve the spicy squid roast hot with rice or roti.
