Koonthal Varattiyadh/Squid Roast

Spicy and yummy squid roast with homemade fish masala powder.

Ingredients

  • 1000 gms Squid (Clean the squid well and cut into small pieces.)
  • 3 unit/count Onions (Finely chopped)
  • 3 unit/count Tomatoes (Finely chopped)
  • 1 tsp Ginger garlic paste
  • 3 unit/count Green chillies (Finely chopped)
  • 1 handful Coriander leaves
  • 2 tsp Turmeric powder
  • 1 tbsp Salt
  • 2 tbsp Red chilli powder
  • 4 tbsp Coconut oil
  • 2 tbsp Cumin seeds
  • 1 tbsp Coriander seeds
  • 0.5 tsp Fennel seeds
  • 0.5 tbsp Mustard seeds
  • 0.5 tbsp Carrom seeds
  • 0.5 tbsp Fenugreek seeds
  • 0.5 tbsp Black peppercorns
  • 3 unit/count Dry red chillies
  • 0.5 handful Curry leaves

Instructions

  1. 1In a pan, cook the cleaned squid with a little water, salt, and turmeric powder for 10-15 minutes.
  2. 2In a pan over medium heat, add coconut oil. Once hot, add onions, tomatoes, green chillies, ginger garlic paste, and salt. Sauté until the onions are translucent.
  3. 3Add turmeric powder and red chilli powder to the sautéed vegetables. Mix well and continue to cook until the spices are well roasted.
  4. 4In a pan over low heat, dry roast cumin seeds, coriander seeds, fennel seeds, mustard seeds, carrom seeds, fenugreek seeds, black peppercorns, and dry red chillies for 1-2 minutes. Allow to cool, then grind into a fine powder using a mixer grinder.
  5. 5Add the prepared fish masala powder to the onion mixture and mix thoroughly.
  6. 6Add the cooked squid to the masala mixture and mix well. Adjust salt as needed. Add coriander leaves and cook for an additional 1-2 minutes before turning off the heat.
  7. 7Serve the spicy squid roast hot with rice or roti.
