Achaaru/Mixed Fruit Pickle

Traditional Kerala pickle with homemade pickle powder. It is really worth a try!

Ingredients

  • 2 units Green Mango (Raw Mango)
  • 5 units Lemon
  • 2 units Carrot
  • 500 grams Dates (Remove seeds before use)
  • 0.5 cup Vegetable oil
  • 5 tablespoons White Vinegar
  • 5 tablespoons Salt
  • 5 tablespoons Mustard seeds
  • 1 tablespoon Fenugreek seeds (Do not add more)
  • 1 tablespoon Fennel seeds
  • 1 tablespoon Cumin seeds
  • 5 tablespoons Red chilli powder
  • 1 teaspoon Turmeric powder

Instructions

  1. 1Boil water and add the lemons. Cook until the lemons are tender, then drain the water and cut the lemons into small cubes.
  2. 2In a bowl, combine the chopped mangoes, cooked and chopped lemons, finely chopped carrots, and finely chopped dates.
  3. 3Add salt to the fruit mixture and mix thoroughly. Set aside to allow the salt to penetrate the fruits.
  4. 4In a pan over low heat, roast all the pickle powder ingredients until aromatic. Allow to cool, then grind into a fine powder.
  5. 5Add the prepared pickle powder to the bowl with the fruits. Mix thoroughly, adjust salt, and add vinegar.
  6. 6Heat vegetable oil in a pan over medium flame. Add mustard seeds and allow them to splutter. Pour this seasoning over the pickle mixture and mix well.
  7. 7Ensure all ingredients are well mixed. The homemade pickle is now ready to serve.
