Achaaru/Mixed Fruit Pickle
Traditional Kerala pickle with homemade pickle powder. It is really worth a try!
Ingredients
- 2 units Green Mango (Raw Mango)
- 5 units Lemon
- 2 units Carrot
- 500 grams Dates (Remove seeds before use)
- 0.5 cup Vegetable oil
- 5 tablespoons White Vinegar
- 5 tablespoons Salt
- 5 tablespoons Mustard seeds
- 1 tablespoon Fenugreek seeds (Do not add more)
- 1 tablespoon Fennel seeds
- 1 tablespoon Cumin seeds
- 5 tablespoons Red chilli powder
- 1 teaspoon Turmeric powder

Instructions
- 1Boil water and add the lemons. Cook until the lemons are tender, then drain the water and cut the lemons into small cubes.
- 2In a bowl, combine the chopped mangoes, cooked and chopped lemons, finely chopped carrots, and finely chopped dates.
- 3Add salt to the fruit mixture and mix thoroughly. Set aside to allow the salt to penetrate the fruits.
- 4In a pan over low heat, roast all the pickle powder ingredients until aromatic. Allow to cool, then grind into a fine powder.
- 5Add the prepared pickle powder to the bowl with the fruits. Mix thoroughly, adjust salt, and add vinegar.
- 6Heat vegetable oil in a pan over medium flame. Add mustard seeds and allow them to splutter. Pour this seasoning over the pickle mixture and mix well.
- 7Ensure all ingredients are well mixed. The homemade pickle is now ready to serve.
