Raw Mango Curry

A flavorful curry made with raw mangoes, coconut milk, and a blend of spices, offering a tangy and aromatic dish typical of Kerala cuisine.

Ingredients

  • 1.5 cups Coconut milk
  • 1 unit Green Mango (Raw Mango)
  • 5 units Green chillies
  • 5 units Shallots
  • 3 units White onions
  • 0.5 inch Ginger
  • 3 sprigs Curry leaves
  • 1 teaspoon Red chilli powder
  • 0.5 teaspoon Turmeric
  • 1 tablespoon Coriander powder
  • 5 tablespoons Coconut oil
  • 1 teaspoon Mustard seeds
  • 2 units Dry red chillies

Instructions

  1. 1Wash the mango, peel it, and cut it into lengthwise slices. Set aside. In a clay cooking pot, combine the sliced onions, ginger, slit green chillies, and curry leaves. Squeeze the mixture with your hands for 2 minutes to enhance the flavors.
  2. 2In the same pot, add red chilli powder, turmeric, coriander powder, and one tablespoon of coconut oil. Mix the spices with the squeezed ingredients until well combined. Allow the mixture to marinate for 10 minutes with the lid closed.
  3. 3Add 1 cup of diluted coconut milk to the marinated mixture and stir well. Place the clay pot on the stove and add the sliced mango pieces. Bring to a boil, then cover and cook on medium flame for 5 minutes. Turn off the heat and add 1/2 cup of thick coconut milk.
  4. 4In a separate pan, heat the remaining coconut oil and add mustard seeds. Once they splutter, add chopped onions, dry red chillies, and curry leaves. Sauté until the onions turn brown. Pour the seasoning over the curry, cover, and let it rest for 10 minutes before serving.
