Tomato Saaru

Saaru is a term typically used in Kannada to describe a less loosened gravy, almost like a rasam. This Tomato Saaru is a flavorful and tangy dish made with tomatoes, tamarind, and a blend of spices, perfect for a light lunch.

Ingredients

  • 3 units Tomatoes (Cut each tomato into 4 pieces)
  • 2 inches Tamarind piece
  • 1 cup Water (Used for cooking tomatoes)
  • 4 tablespoons Sunflower oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Jeera (Cumin seeds)
  • 4 units Garlic flakes (Crush using a mortar and pestle)
  • 3 units Dry red chillies
  • 2 sprigs Curry leaves
  • 1 unit White onions (Dice into small pieces)
  • 1 tablespoon Rasam Powder
  • 1 teaspoon Jaggery
  • 2 sprigs Coriander leaves
  • 0.25 cup Coconut (shredded)

Instructions

  1. 1Cut each tomato into four pieces. Crush the garlic using a mortar and pestle. Dice the onions into small pieces.
  2. 2In a pressure cooker, add the chopped tomatoes, tamarind piece, and a cup of water. Cook until one whistle. If using an instant pot, cook for 4 minutes. Allow to cool, then mash the tomatoes with a potato masher and set aside.
  3. 3In a pan, heat the sunflower oil. Add mustard seeds, jeera, and crushed garlic. Once they turn brown, add dry red chillies, curry leaves, and chopped onions. Sauté until the onions turn brown, then add the cooked tomato mixture.
  4. 4Add a small amount of water, jaggery, and rasam powder to the pan. Once it boils, add coriander leaves and shredded coconut. Mix well and turn off the heat.
