Salted Mango Paraku
Paraku is a side dish prepared in the Malabar region of Kerala using coconut and curds. This version uses salted mangoes for a tangy twist.
Ingredients
- 4 units Salted mangoes
- 2 units Green chillies
- 1.5 cups Coconut, shredded
- 4 units Dry red chillies
- 2.5 tablespoons Mustard seeds
- 2 sprigs Curry leaves
- 4 tablespoons Coconut oil
- 0.25 cup Water (Add if the gravy is too thick)
Instructions
- 1Lightly smash the salted mangoes and combine them with chopped green chillies. Set aside.
- 2In a mixer grinder, grind the shredded coconut and dry red chillies to a fine paste. Before grinding, briefly sauté the dry chillies in coconut oil. Finally, add 2 tablespoons of mustard seeds and grind for a few seconds.
- 3Add the ground paste to the salted mango mixture and mix thoroughly. Incorporate a sprig of curry leaves. If the mixture is too thick, add a little water to adjust the consistency.
- 4In coconut oil, season with mustard seeds, dry red chillies, and curry leaves. Pour this seasoning over the mango mixture and serve.
