Ollan
A traditional Malabar vegetable curry featuring taro root, raw banana, and Mangalore cucumber cooked in coconut milk, seasoned with coconut oil, garlic, and dry red chilies.
Ingredients
- 1 unit Taro root
- 2 units Raw banana
- 1 unit Mangalore cucumber
- 2 units Green chillies
- 4 tablespoons Coconut oil (Mandatory for authentic flavor)
- 1 cup Coconut, shredded (For extracting coconut milk)
- 6 units Garlic flakes
- 3 units Dry red chillies
Instructions
- 1Cut the taro root, raw banana, and Mangalore cucumber lengthwise. Rinse thoroughly and place them in a pressure cooker. Cook for two whistles.
- 2Once the cooker has cooled, open it and mash the vegetables. Extract coconut milk by adding a small amount of hot water to the shredded coconut. Repeat the process for a second extraction.
- 3Turn on the heat and add the second extraction of coconut milk to the mashed vegetables. Once it begins to boil, add the first extraction of coconut milk. Do not boil further.
- 4In a separate pan, heat coconut oil and add dry red chillies and crushed garlic flakes. Pour this seasoning over the curry. Coconut oil is essential for authentic flavor.
