Taro Root Side Dish

Ingredients

  • 3 units Taro root
  • 1 teaspoon Turmeric
  • 1 teaspoon Red chilli powder
  • 2 teaspoons Salt
  • 1 teaspoon Mustard seeds
  • 2 units Dry red chillies
  • 2 sprigs Curry leaves
  • 1 unit White onions
  • 3 tablespoons Coconut oil
  • 1 cup Coconut, shredded
  • 0.5 cup Water (Just enough to immerse the taro root)

Instructions

  1. 1Clean the taro root and cut it into small pieces. Place them in a cooking vessel and add turmeric, salt, and red chilli powder. Pour in just enough water to immerse the taro root.
  2. 2Cook the taro root until the water is absorbed. Add the shredded coconut and stir well to combine.
  3. 3Heat the coconut oil in a pan. Add mustard seeds, dry red chillies, chopped onions, and curry leaves. Sauté until the onions are translucent and the spices are fragrant.
  4. 4Add the prepared tempering to the cooked taro root. Stir well to combine all ingredients. Serve hot.
